Meet the Dietitian
Julie Nance has a B.S. degree in Communication Arts-Public Relations from Georgia Southern University and a B.S. degree in Dietetics from Kansas State University. She completed her dietetic internship through the University of Alabama at Birmingham. She also completed a Master’s of Science in Applied Nutrition/Nutrition Education from Northeastern University in Boston. Thanks to Julie’s husband, who was an active-duty soldier in the US Army now retired, she has enjoyed working and living in many different communities around the world for more than 20 years. Recently, she worked as the only Diabetes Educator/Registered Dietitian for Womack Army Medical Center on Ft. Bragg in North Carolina. As the Diabetes Educator/RD, Julie worked with 54 active-duty soldiers diagnosed with type 1 diabetes, educating them on how to obtain and maintain optimal nutritional status and optimal blood glucose control while functioning at the highest level of performance before, during and after deployment. During this time she also followed 31 pediatric patients with type 1 diabetes, working closest with the adolescent athletes. She has been published twice in military medical journals for her work with the soldiers and pediatrics. Julie is also now certified as a Master Trainer in Food Allergen’s and Celiac Disease. All of our managers’ are certified by AllerTrain in Food Allergen’s. Now that Julie is a Master Trainer, she will be working to ensure all staff is properly trained. Simple Servings is our allergen-safe, dining option for our customers with food allergies or gluten intolerance. This station offers food free from peanuts, tree nuts, shellfish, wheat, soy, milk products, eggs, and gluten-containing ingredients. Simple Servings staff members are carefully trained to avoid cross-contact with food allergens.
Mindful is Sodexo's health & wellness approach that helps you make healthy choices second nature! We are committed to creating healthy environments for our customers. Central to this effort is providing healthy, nutritious foods. The result of this initiative is an approach that focuses on transparency of ingredients, delicious food, satisfying portions and clarity in message so that you can make Mindful choices!
Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. Each meal part is limited in calories, has fewer than 30% of calories as fat, fewer than 10 % of calories as saturated fat, and is restricted in sodium, and cholesterol. Look for the Mindful icon to indulge in the healthy and delicious items offered at each meal.
A variety of gluten-free items across campus and can accommodate customers with foods that are free from gluten-containing ingredients and protected against cross-contact with gluten.
Menu items with the vegetarian icon contain no meat, fish or poultry, or any meat products such as soup base. Our vegetarian offerings meet the needs of lacto-ovo vegetarians and may include eggs and/or dairy products.
Vegan offerings contain no meat, fish, eggs, milk or other animal-derived products such as honey.
